Two fine meals in 24 hours – Le Pot de Lapin (Saumur) – part 2

Olivier Thibault

Unlike Le Clos de Jeanne, a new discovery, Olivier Thibault's Le Pot de Lapin is an old favourite, so it was a pleasure to return there for lunch last Thursday. A special pleasure as the cooking was particularly assured on this visit

From the fine wine list, which naturally features plenty of Saumur-Champignys and Saumurs, we chose a spring cuvée – 2015 Terres Rouges, Saumur-Champigny, Domaine de Saint-Just made by Arnaud Lambert. It was deliciously seductive with soft black fruits. Dangerously easy to drink at lunchtime!

My creamy haddock starter was extremely good

Roasted Saint-Marcellin with Parma ham

Calamari rings

Filet de veau with caramelised shallots

Wonderfully cooked calves liver with buttery mashed potato
garnished with garlic and parsley
