Rillettes de Tours to be a protected name?

After 15 years of campaigning Rillettes de Tours has been given the green light by the INAO to become a protected name. It will now await approval by Brussels before becoming an IGP (Indication géoghiquement protégée). One of the characteristics of the rillettes de Tours is that the strips of shredded pork must be more than 2cms long.

Hardouin in Vouvray and with shops in Tours is one of the best known, quality producers of rillettes. Details here.
