Never forget that the wines of Claude Papin are superb!!*

Ask him on my behalf to tell you, for the nth time, his true story on how blending-in several types of Chenin from several terroirs homogenizes their speed of polymerization and leads to a more harmonic evolution in time, without the “hollow” episodes which many a wine go through. And ask him about his recipe of fresh strawberries in a rosé-based soup. And ask him about a walk in the Coulée de Serrant (as thieves, incognito) somewhere in 1995, with a bunch of idiots, all mocking his Majesty Joly. And tell him we are drinking les Rouannières now, and Louche, and Verger and .... mostly 1990, as well as his Quarts-de-Chaume (1992, that one). And say hello to him, if he still remembers me. I, for one, never forget his wines are superb!
